Yonxi Jade Fire (Yong Xi Huo Qing) 火青

Yongxi Jade Fire Tea resembles Gunpowder Tea but it is actually a much higher quality tea. Gunpowder is made in Zhejiang Province with low quality leaves while Huo Qing (Jade Fire) Tea is made in Anhui Province with the one bud two leaves system which provides for a better overall taste. The tea gets its unique name because it has been fired over charcoal. The distinctively rich and smooth floral flavor presents a pleasant balance of astringency and sweetness with a long and refreshing aftertaste, and a unique light smokey fragrance.

Revived in 1956 this famous tea has been produced since the time of the Ming Dynasty (1368 to 1644). Originating in the village of Yong Xi, this tea is tightly rolled, dark, and exhibits glossy leaves with a few more yellowish shades. It is called Jade Fire because of its strikingly bold green appearance that has been fired over charcoal. The distinctively rich and smooth floral flavor presents a pleasant balance of astringency and sweetness with a long finish and refreshing aftertaste. The tea has a strong, vegetal and lasting flavor. As it has been fired by charcoal during the process, it has a light smokey fragrance unique in taste all to itself.

Brewing Guide: To get the most out of your tea, as a general rule it's always recommended to use glass-based or porcelain tea ware. First rinse the tea cup and teapot with hot water. Then use about 2 grams of tea leaves (1-2 teaspoons) for every 150ml (5 fl oz.) of water. Traditional method is to steep the tea leaves in hot water at 175°F to 185°F for 1 minute for the first and second brewings. Gradually increase steeping time and temperature for subsequent brewings. However one can steep for up to 2 or even 3 minutes if a stronger cup is desired.
